Brick Cheese

Brick probably got its name from the days when cheese makers used bricks to weight their cheese presses. Brick is allowed to mature for about 2 months. Its soft texture and mildly milky flavour has a hint of butter, and Brick is often used in cheese trays. ADL Brick has enough character to stand alone as a finger food or with other foods in a favourite recipe.
